The opening of the much-anticipated Jose Jalapenos restaurant at 503 Henry Clay in Ashland is slated for this week – Wednesday or Thursday, according to workers at the restaurant. The restaurant will be the second Jose Jalapenos for owner Jose Luis and his family. The Columbia location, which opened in 2013, is located at Highway 63 and Grindstone Parkway.
